Broccoli & carrot soup
A tasty way to have more variety and vegetables in your diet!
Ingredients (serves 2):
o 1 small onion
o 1 sliced celery
o 2 carrots
o 1 small tomato
o 2 cups of broccoli florets
o 2 tbsp olive oil
o 1/2 cup of milk
Method:
1️-Cut the onion, carrots, celery and tomato into slices.
2️-Heat the olive oil in a saucepan then stir-fry the onion slices for 2-3 mins before adding
the other ingredients.
3️-Add the carrots, celery and broccoli florets to the pan. Add the spices then stir-fry on a
medium heat for another 2-3mins.
4️-Add the tomato and boiling water (you can add chicken stock instead), reduce the heat
and cover the pan for around 10-15 mins till the veggie become soft.
5️-Blend the ingredients using hand-blender or simply transfer them to a blender and blitz until smooth.
6️-Add oat milk and cook for another 2-3 mins on low heat.
7️-Adjust the spices to taste and enjoy.
8- feel free to add some grilled chicken strips on top or croutons.
